Cooking is like art. It is an union of colors, tastes and different smells. Cooking is like painting: you have to select carefully all the ingredients, textures and tones appearance, as in a portrait. If the choices are appropriate, the dish will be fixed in everybody’s mind and in the taste buds of those who try it.

During these days in London one perceives little summer. There are clouds, rain, thunder and lightning. On days like these I love cookin and listening to the sound of the rain hitting on the window of my kitchen.

Today, after have been working for hours on my computer, I went out for a walk to enjoy the typical smell of London (i.e. that of rain, dear me! ) and going missing myself among the shelves of “Whole Foods”, in Stoke Newington. Whole Foods is a supermarket chain, which you can find in different parts of London. It is specialized in selling organic and monitored products. Today I purchased courgettes, turmeric and curry for tonight’s dinner.

Curry is a mixed spice that I love and that can easily be prepared at home. It has anti-inflammatory and antioxidant properties and is mainly composed of turmeric. Turmeric has depurative and antioxidants properties, an intense color and it is unique in flavor. They are both well known spices in Eastern and Asiatic kitchen, they can be used in the preparation of many dishes but also for beauty care.

I’m going to prepare a batter based on curry and turmeric as breading for courgettes: a mix that you should definitely try

 Ingredients for 5-6 people:

  • 6 Courgettes
  • 150 g Rice flour
  • 1 Teaspoon curry powder
  • 1 Teaspoon turmeric powder (as I said it is contained in curry, but I add it to get a stronger flavor)
  • 200ml Beer or sparkling water
  • A pinch of salt
  • Vegetable oil

Method:

  1. Wash and cut the courgettes in sticks;
  2. In a bowl, mix some flour with curry and turmeric powder;
  3. Add some beer or sparkling water (it must be very cold) and quickly mix until it forms a smooth mixture;
  4. Dip the courgette sticks into the batter and wrap them totally;
  5. Heat in a pot some seeds oil; when it is quite hot, fry the courgette little by litte until they become golden brown;
  6. Leave them for few minutes on a tray covered with absorbing paper towels and then serve them hot.

My advices:

  • If you want you can combine these sticks with a sweet and sour sauce. Enjoy them!

Raw Coconut Cake 

Always more frequently we hear about the toxicity of certain food and the damage they cause to our health. Overcooked food high in fat and low in nutrients leads to very bad consequences on human physical condition and bad mood. However, the question is: how could we overcome these issues, in a society that offers always less adequate education to food? It’s simple: we have learnt how to live in good health.

A vegan diet is surely one of the most appropriate choices to keep away from these problems, but it is fair to know that there are more radical and healthy methods: for example, the raw foods diet.                         

Raw food is a way of feeding that excludes cooking food and involves religious, environmental and healthy choices. A raw foods diet is made up of fresh, whole, rough, plant-based foods: it is considered an healthy diet, because it preserves most of food nutrients, avoiding cooking methods.

There are various types of raw foods diets: the omnivore raw food diet (which includes the consumption of all foods that can be eaten raw); the carnivore raw food diet (which includes the consumption of raw meat and raw animal products and low consumption of vegetables); the vegetarian raw food diet (which includes the only consumption of raw vegetables, that do not include the killing of animals); the fruitarian raw food diet (which includes the consumption of only raw fruits), the vegan raw food diet (which includes the consumption only raw vegetables).

Among these type of diets the best is definitely that of raw and fruitarian vegan food. So, why do we need to start a raw food diet?

Why raw food is good for you…

When cooking on the stove you lose the real food taste, the real texture and most of the its quality. A raw food diet is not only easy and fast, but also healthy and low cost: it increases body energy level and gives a healthy weight, it improves brain functions, it helps keeping the body hydrated and younger, and clean skin, it keeps the body constantly purified and healthy, it is detoxifying. Moreover, this diet helps our bodies assuming all the food nutrients, it reduces environmental impacts and it brings many other benefits that you will discover yourself. It is not a simple choice and it must be addressed gradually. If you’re not ready to make a raw food diet, you should follow a similar regime for short periods (for example, for a week when you need it), to try keeping your body as healthy as possible.                                                   

With the arrival of the warm season, a raw meal may be much more appreciated. Today, I will prepare a raw coconut cake: I am sure you won’t do without it!

INGREDIENTS FOR 10 PORTIONS:

For the cake base:

  • 200 g mix nuts
  • 100 g dates
  • 30g sunflower seeds
  • 30 g cocoa powder
  • 30 g coconut flour
  • 30 ml coconut oil
  • 130 ml maple syrup
  • A pinch of salt

For the cream stuffing:

  • 2 avocados
  • 100 g dates
  • 100 ml almond milk
  • 200 ml maple syrup
  • 30g cocoa powder
  • 20g mix nuts

To garnish:

  • Coconut flour
  • Roasted almonds (for a 100% raw cake use raw almonds).

Method

For the cake base:

  • Blend with a kitchen mixer some nuts until you reduce them to a mush.
  • Add dates, sunflower seeds, cocoa, coconut flour, coconut oil, maple syrup and salt and blend until mixture becomes smooth and moist; you can work with your hands.
  • Transfer the mixture into a round cake baking pan and flatten on the basis, to form a homogeneous layer.
  • Let it sit in the freezer meanwhile you prepare the cream.

For the cream:

  • Blend avocados and dates with a kitchen blender.
  • Blend with almond milk and maple syrup together.
  • Add cocoa powder and mix nuts.
  • Pour the cream on the cake base.
  • Garnish the cake base with coconut flour and almonds.
  • Let it sit in the freezer for about 2 hours.

My advices:

  • If the mixture seems too dry (the base and the cream), add more milk or maple syrup. It all depends on nuts you used.

Gazpacho Soup Recipe

Gazpacho Soup Recipe 

When summer comes, the city seems to awaken from hibernation. The elderly sit on benches in the squares, standing around and chatting for hours while passing the rough hands through their white hair. Mothers wearing long skirts that bare their still pale ankles are busy to run after their kids, so elated at the arrival of warm weather. All the parks, fountains, cafés are full of sincere smiles and happy looks, enjoying their finally found freedom. Summer creates a special atmosphere: it seems to last a minute but is always intense and overwhelming.

Ice cream and ice lolly are part of everybody’s diet in such a period, however I am a lover of soups and, despite hot temperatures, I don’t want to give them up. For this reason, I always look for an alternative version of winter hot soups.

For example, today I will prepare the Gazpacho: a Spanish cold soup based on vegetables, that is very common in Andalusia, where weather is very hot. This is a dish that can be served with ice cubes, as an aperitif or simply by pouring it in a glass instead of a dish or a cup.

This is a recipe full of beneficial properties, rich in vitamins and antioxidants, because it is made with uncooked vegetables.

In short, food is once again on our side. Enjoy every moment, without giving up anything! ♥

The recipe:

Ingredients for 4 people:

  1. 500 g ripe tomatoes;
  2. 2 cucumbers;
  3. 1 red pepper;
  4. 1 red onion;
  5. 2 garlic cloves;
  6. 2 tablespoons vinegar;
  7. 3 tablespoons extravirgin olive oil:
  8. 100 g bread crumbles;
  9. Just enough salt and pepper.

Method:

  1. Cut tomatoes in four parts;
  2. Peel the cucumber, cut it to length to eliminate the seeds and then cut roughly into chunks;
  3. Chop the red peppers, depriving all the seeds;
  4. Peel and slice the onion and the garlic;
  5. Blend all the ingredients together, adding vinegar and oil;
  6. Add salt and pepper to season;
  7. Put the mixture into a bowl and add the bread crumbles;
  8. Put in the fridge for a few hours and serve cold.

My advices

  • Combine gazpacho soup with toasted bread.
