Vegan Panna Cotta

All vegans certainly feel nostalgic of some flavour that they have decided totally to ban from their diets. There is nothing wrong with this, because if you ban animal derivatives from your diet it does not mean that you don’t appreciate their taste, but you do it for an ethical choice.

For this reason, I really enjoy trying to reproduce the vegan version of traditional recipes. I must admit I often fail but sometimes the result is incredible.

For example, today I woke up thinking about a beloved childhood dessert, since I have not eaten it for a very long time: panna cotta, a pudding obtained from the union of sugar, cream, milk and jelly. I replaced these ingredients with plant based milk, agar-agar and turmeric powder: the result is a thick sweet fragrant and tasty (with a slight aftertaste of vanilla) dessert. It really satisfied me!

Vegan food is not a sacrifice, but a journey through pleasures and creativity!

Vegan Tiramisu

Today is a day totally dedicated to the past and in fact, I am going to prepare the delicious vegan tiramisu, inspired by the notes of one of the songs of  The Cranberries: a band that has accompanied much of my adolescence and which inspired my soul.

Unfortunately, Dolores O’ Riordan, the 46-year-old singer of Cranberries, suddenly died a few days ago, while she was recording new songs in London. Her beautiful unmistakable voice was a symbol of hope and dreams for all of us. She left an indelible mark in the hearts of many people.

I used to prepare tiramisu when I was a young little girl. Today I tried to make an alternative and totally vegan recipe that could be as close as possible to the original flavor. Vegan tiramisu is prepared with an incredible cream of coconut milk and biscuits soaked in coffee with a sprinkling of cocoa.

Spinach Pancakes

I thought to prepare one of the dishes that I love eating for breakfast, but in savory version. This recipe is very simple and quick to make, it can be made with many ingredients and dressing, so I love to prepare it often and in different ways.

Today, for example, I have chosen to use spinach: a food with laxative and anti-inflammatory properties, which is very good for the heart and strengthens the immune system. Many people do not like spinach, but if you prepare them in this way they reach a perfect flavour and consistency. I added some leeks and green olives, which make the batter super tasty!

They are always perfect for a light lunch and calm down your hunger, and, why not, even for breakfast!
