NOODLES, THE HEALTHY VERSION BY NATUREAT

noodles are some of the most popular in the world, and when you taste them, you’ll know why

INGREDIENTS:
(Quantity of your choosing)

Noodles

Mushrooms

Peppers

Carrots

Courgettes

Onions

Soya sauce

Olive oil

Salt

 

HOW TO PREPARE NOODLES:

 –       Cut onions, peppers and mushrooms. Then separately grate carrots and courgettes;

–       Heat some olive oil in a wok or pan, add onions and speed on a medium flame until they become golden browned;

–       Add peppers and keep stirring till the veggies are mixed well for minute or two (they require longer cooking);

–       Add all the other vegetables;

–       Put some salt and cover the pan. Wait minute or two, let it well cook and flavour. (remind vegetables release lots of water);

–       Add some soy sauce;

–       When water comes to a boil, add the noodles. Let them cook;

–       Switch off the fire, then serve the veg noodles steaming hot.

P.S. Veggies can be cooked as you like. I better prefer to keep them stirring for minute or two till they become completely crunchy, so they will maintain all their properties.

I show you some of the things I do in the morning during the week-end, especially during the summer time when the weather is nice 🙂

SUN-DRIED TOMATOES PATE’

INGREDIENTS (FOR 4 PEOPLE)

400 g whole wheat Spaghetti
100 g sun-dried tomatoes of Agriblea
1 garlic clove
5 cappers
5 tablespoons olive oil
15 mint leaves
4 brazil nuts
2 glasses of water

DIRECTIONS:

Cook pasta in a large saucepan of boiling, salted water.

Meanwhile, combine all the ingredients in the container of a food processor, until completely smoother.

Add pasta to sauce.

Sun-dried tomatoes paté is an ideal quick starter, as a spread for “bruschetta” toasted bread.
